Ingredients:
- 1 cup quinoa, rinsed
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 6 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion, carrots, celery, and minced garlic
Saut until vegetables are tender
Add diced chicken to the pot and cook until browned on all sides
Stir in diced tomatoes, quinoa, chicken broth, dried thyme, dried rosemary, bay leaf, salt, and pepper
Bring the stew to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until quinoa is cooked and chicken is tender
Remove the bay leaf and discard
Adjust seasoning if needed
